Pastorel Teodoreanu used to say about wine that it is the only liquid living being. Like every human, wine is born, it grows, ages and then it dies.
The birth phase of wine begins with the completion of must fermentation and lasts until the first decanting, when it experiences a series of physio-chemical and biological transformations materialized in a clearer look, a specific color, smell and taste depending on the type of grapes from which it’s made.

In the maturation phase, the wine is balanced while some flaws are eliminated by applying treatments such as those for stabilization.
The aging phase of the wine is the period in which the wine reaches its maximum qualities, imposing the taste, finesse, softness and color specific to the variety. Also, in this phase, the wine bouquet is formed and completed.
The degradation phase begins when the wine begins to lose its qualities, after entering the aging period. The shelf life of wines depends on its composition and storage conditions.
